I grew up on Mississippi Spice Muffins. They were my favorite Thanksgiving dish! My first Paleo Thanksgiving I did not even try to recreate them. The next year I was desperate so I tried, I failed! I tried again the next Thanksgiving and failed again. Finally this year I came up with a grain free version that makes me so happy! They are moist and delicious with an apple cinnamon flavor. You can make them dairy free with coconut oil too. I just love the taste of my good organic grass fed butter and I love to top the muffin with pat of butter! Enjoy!

Mississippi Spice Muffins-Grain Free by Beth Schultz

Prep Time: 25 minutes

  • Cook Time:20
  • Preheat oven to 350 degrees
  • 1 cup of grass fed butter, Ghee or Coconut Oil
  • 1 cup coconut sugar
  • 1 cup applesauce
  • 2 eggs
  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ¼ cup arrowroot flour
  • ½ teaspoon real salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon ground clove

On the stove top melt butter, apple sauce and coconut sugar. Once butter is melted take off stove top and let cool for a few minutes then stir in eggs. In a large mixing bowl add all dry ingredients and slowly add in the wet while stirring. Use a large muffin pan with liners and add mixture immediately. You do not want it to sit for too long because the coconut flour absorbs too much. This make 12 large muffins. Bake on 350 for 17-20 minutes. Let cool and enjoy!
